Seared Florida Tuna Steaks
  • 4 (6-ounce) tuna steaks
  • 1 cup Kalamata olives, pitted, sliced
  • 3 cloves fresh garlic, minced
  • 1 cup grape tomatoes, halved
  • 2 tablespoons capers, drained
  • 1/4 cup fresh herbs (basil, parsley), hand torn
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese, diced

  • fresh ground pepper to taste
Florida Herb Oil

  • 1/4 cup fresh basil
  • 3 cloves fresh garlic, minced
  • 1 teaspoon lemon zest
